These easy Pumpkin Spice No Bake Cookies will fill your pumpkin AND chocolate cravings, without a lot of work. The pumpkin spice, peanut butter, oats, and butter, are the perfect combination!
Either you love pumpkin spice or you’re totally over it, am I right? I get the feeling that people are kind of passionate when it comes to pumpkin spice, but I, for one, will never get sick of it. Unless it’s in a pumpkin spice steamer from that really popular coffee shop that everyone raves about. I’m a little done with those.Fall time seriously makes me want to just bake all the day long, without having to think of the consequences of calories. I want cinnamon rolls and caramel popcorn and pecan pie and pumpkin everything – basically all things bad for me. As I was craving something easy and delicious to make with my daughter this week, I thought up the idea of pumpkin spice no bake cookies. I thought it was brilliant and it would fit the easy AND delicious aspects perfectly! I was right. They are so easy to make, they won’t heat up my house {it’s still 90 degrees here in Louisiana}, and the clean-up is a breeze. Plus, they have oatmeal in it, so it’s basically whole grain and totally healthy for you. I’m just sayin’.
I have fond memories of making no bake cookies with my best friend growing up. In middle school, we would go to her house what felt like every day and we would pretend we were on a cooking channel and would make all kinds of desserts and goodies. Our go-to recipe was no bake cookies. I am loving this fall-time spin on such a well-known and loved recipe!
Pumpkin Spice No Bake Cookies
Ingredients
- 1/2 cup butter {I use salted}
- 1/2 cup milk
- 1 & 3/4 cup granulated sugar
- 1/4 cup cocoa powder
- 1/2 cup crunch peanut butter
- 2 tsp. pumpkin spice
- 1/2 tsp. vanilla extract
- 3 cups oats
Instructions

In a large saucepan, bring the butter, milk, sugar, and cocoa powder to a boil and let boil for 1 & 1/2 minutes.

Remove from heat and stir in the peanut butter, pumpkin spice, and vanilla, letting the peanut butter melt completely.

Add the oats and mix until fully coated.

Drop by spoonfuls onto wax paper and let cool until hardened.
Recipe Notes
*I used Special Dark Cocoa Powder in this recipe, hence the darker color. You can use any cocoa powder that you prefer.
*I used old-fashioned oats in this recipe, but quick oats work great too!
