Yep, you read that right. Strawberry Cheesecake Stuffed French Toast. If only computer screens had smell and taste features, because this recipe is a good one! My husband and kids all raved about it and we learned that it actually makes for pretty great leftovers too. High fives all around!
I have to admit that breakfast is not my greatest strength. I mean, unless you count eating it, which I am really, really good at. But making it? Not so much. I prefer a menu that requires dumping one ingredient into a bowl and then adding water or milk to it before serving. Cereal, cream of wheat, or oatmeal, anyone? If my kids are lucky, they will get some eggs and bacon. If they are really lucky, we will even have German Pancakes. But both of those happen more rarely than I’d like to admit.
Despite the low bar I set for breakfast, I have to admit that this Strawberry Cheesecake Stuffed French Toast is pretty dang tasty and might just be worth the extra effort it takes to make in the mornings. Real French bread is stuffed with a sweet cheesecake filling, cooked up like regular French Toast, then topped with a strawberry glaze. If you’re in a time crunch, you could easily get away with a store-bought strawberry syrup, but making it from scratch is definitely worth it if you have the time! Top it with whipped cream or powdered sugar and it is seriously something you would find in a restaurant. So good!
Strawberry Cheesecake Stuffed French Toast
This Strawberry Cheesecake Stuffed French Toast is a lot easier to make than you would think and is pretty tasty! Surprise your family or house guests with this delicious and easy breakfast!
Ingredients
- 1 cup mashed fresh strawberries
- 1/2 cup white sugar
- 1 Tbsp cornstarch
- 1 cup cold water
- 1/2 cup milk
- 3 large eggs
- 1 pinch cinnamon
- 1 8 oz pkg cream cheese, softened
- 1 tsp vanilla extract
- 3/4 cup white sugar
- 1 loaf French bread
- 1 tsp butter
- Whipped cream (optional)
- Powdered sugar (optional)
Instructions

In a medium saucepan, heat the strawberries and 1/2 cup white sugar over medium heat.

In a small bowl, mix the cornstarch and water together and add to the strawberries.

Cook and stir until thickened, about 3-5 minutes. Reduce heat to low and simmer while preparing remaining ingredients, stirring occasionally.

In a shallow bowl, whisk the eggs, milk, and cinnamon together. Set aside.

Mix the cream cheese, vanilla extract, and 3/4 cup white sugar together in a bowl, until smooth.

Cut your French bread into slices that are 2 inches thick. Then cut a slit in each of the slices that reaches almost to the back, but doesn't break through the other side.

Use a spatula to stuff the cream cheese mixture into the bread. Repeat with the remaining slices of bread.

In a large skillet, heat the butter over low-medium heat.

Dip the stuffed bread in the egg mixture, covering both sides and letting the excess drip off, then place in the skillet.

Cook until golden brown on both sides, about 3 minutes per side.

Top with strawberry syrup, whipped cream, and powdered sugar, if desired.

I tweaked this recipe just a tad… I added some of the cooled berry syrup to the cream cheese mixture, and folded it in. I placed the mixture in a ziplock baggie and piped the filling into the bread. I also knew I wasn’t going to use all of the stuffed French toast at once, so I froze some (prior to cooking) so that I could pull them out as needed! Yummy yummy yummy!! Great recipe!!
Love this French toast. Had made rving a couple summers ago for our shared breakfast with family we go camping with, and everyone loved it. Looking for a special Christmas breakfast with my husband on this so strange of years, and thought of this. Fantastic and so decadent to treat yourself with. And so easy. I use brioche bread and put between 2 slices. Thank you for the recipe!
