These Healthy Banana Pancakes give you a banana bread taste, without sacrificing your calories. They are a very easy, low calorie breakfast to throw together!
Banana Pancakes were a staple in college and bring back some great memories for me, which is why I was excited to be able to tweak such a favorite recipe and make these Healthy Banana Pancakes! This version is a little more forgiving on my body, that clearly isn’t in college anymore.
I lived with some of my very best friends during my junior year of college. We all got along so well that we actually moved all of our beds into one room, so we could have a sleep over every night. The other bedroom was used strictly for dressing and getting ready in the mornings. It was awesome. One of those good friends is now my sister-in-law and the other is now my cousin, thanks to my handsome husband who is related to both. It’s funny how life works out so well like that.
Anyway, we had a weekly Banana Pancakes Night and would invite everyone in our apartment complex over for it. Those nights hold some of my favorite, care-free memories. I love having a Healthy Banana Pancakes recipe now to take me back to the good old days, but don’t make me want to cry for how many calories they hold. I was surprised by how delicious they taste, considering they are only about 100 calories per pop!
- 1.5 large bananas
- 4 large egg whites
- 2 Tbsp. honey
- 1 cup instant oatmeal
- 1 tsp. vanilla extract
- ⅛ tsp. cinnamon
- 1-2 Tbsp. milk
- Spray a griddle or skillet with non-stick spray and warm on medium-low heat.
- Blend all ingredients together in a blender on high for 30 seconds.
- Pour ¼ cup of batter onto the griddle and cook until lightly browned. Flip and cook other side until it begins to brown.
