If you know me, you know I thrive on easy meals. Seriously. Sometimes I get so bugged that I can’t find an easy dinner recipe that I end up just waiting for Zachary to get home to make it because let’s be honest – he likes cooking way more than I do {I prefer baking} and he’s a lot better at coming up with amazing dinners off the top of his head. It’s awesome.
One of our most popular recipes on this blog happens to be one of the easiest dinners in the world – 8 Can Taco Soup. Not only is it easy, but it tastes so good! We have it a little too frequently at our house. 😉 In attempts to come up with something equally as easy and delicious, I made up this recipe for 7 Can Chicken Enchilada Soup. You should make this for dinner. Tonight. It’s that good.
7 Can Chicken Enchilada Soup
Makes 8-10 servings
Ingredients:
- 1 {13 oz.} can white chicken breast
- 1 {15.25 oz.} can whole kernel corn
- 1 {4 oz.} can green chilies
- 1 {10.5 oz.}can cream of chicken soup
- 1 {14 oz.} can chicken broth
- 1 {14.5 oz.} can petite diced tomatoes, drained
- 1 {10 oz.} can enchilada sauce
- 1/2 packet enchilada seasoning
- {Optional} tortilla strips
Directions:
- Mix all ingredients in a large pot and stir over medium heat until warm.
- Top with tortilla strips.
See? Super easy, right? I think I need a bowl of the myself on this cold, wintry day!

Hi, I’m a little unsure of what enchilada seasoning is. I looked in the area where the packets of taco seasoning are and couldn’t see anything, so I ended up just buying taco seasoning. Is that kind of the same thing? Thanks!
