10 Minute Peanut Brittle

Have you ever made peanut brittle? I'll be honest - I've been a little too intimidated to try it before now. It always seemed to be such a delicate recipe that I didn't even want to bother. That is, until I found this peanut brittle recipe!


You really can make it in ten minutes or less. Ten minutes! It takes me longer than that to drag my butt out of bed some mornings. You can't beat that - little time in the kitchen with one huge reward. Add a little popcorn in there, and you've got your very own homemade Poppycock! {This recipe was adapted from the 30 Minutes or Less Cookbook.}

Ingredients:
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/8 tsp. salt
  • 1 cup peanuts, roasted, salted {or any other kind of nut you enjoy}
  • 1 Tbsp. margarine
  • 1 tsp. vanilla
  • 1 tsp. soda

Directions:
  1. Butter a 9x13 inch baking dish or cookie sheet; set aside
  2. In a 2 quart microwave safe bowl, combine sugar, corn syrup, and salt.
  3. Microwave on high for 4 minutes.
  4. Stir in peanuts.
  5. Microwave another 3 minutes or until syrup is lightly browned, stirring every minute.
  6. Add margarine, vanilla, and baking soda until light and foamy.
  7. Spread to 1/4" thickness in pan. 
  8. Let cool and break into pieces.

I'm not sure why, but my mind has always associated peanut brittle with Christmas. I guess I know what's going in our Christmas neighborhood goodie bags this year! ;)
