Dad's Pork Chops and Rice

Ingredients

  • 9 Tbsp butter divided
  • 2 cloves garlic minced
  • 2 cups uncooked white rice
  • 2 - 10.5 oz cans beef consomme soup
  • water
  • 1/2 white onion chopped
  • 6 boneless pork chops
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 400°.
  2. Melt 8 Tbsp of butter and pour it into a 9 x 13 casserole dish. Add the rice, minced garlic, chopped onion, and beef consomme to the dish. Fill up the can with water and pour it into the mixture. Repeat one time. Mix everything together.

  3. Cover the dish with tin-foil and place in the oven. Cook for 40 minutes.
  4. Season both sides of your pork chops with salt and pepper. Melt a tablespoon of butter in a skillet and add the pork chops. Cook the pork chops on medium-high heat, for about 3-4 minutes each side.

  5. After the rice has cooked, remove the foil and place the pork chops on top of the rice mixture. Place back in the oven for an additional 15 minutes.
