Happy Pi{e} Day!! I can’t be the only math nerd here that gets what Pi Day is, right?? You know – pi ~ 3.14159265…blah blah blah and today is 3/14! Glad we’re all on the same page here. I was browsing pie recipes that seemed appealing the other day and I came across this delightful looking Biscoff pie! Confession: up until a few months ago, I had no idea what Biscoff was. I remember going to the store with my sister-in-laws and one of them {Nikki} was searching everywhere for Biscoff. I didn’t get what the big deal was until she went home and whipped up these Biscoff No Bake Cookies. Holy amazing! I am now a Biscoff fanatic. This pie right here has officially converted my husband to the awesomeness that is Biscoff as well. It’s delicous!
I’m taking this bad boy to work today and I’m so excited! I love that there’s a day that we can eat pie and not feel bad about it. After all, we have to celebrate right?
Recipe from Gimme Some Oven
Ingredients:
Crust:
- 1 {8.8 oz.} package Biscoff cookies
- 1/4 cup {4 Tbsp.} salted butter, melted
- 1 cup heavy whipping cream
- 1 cup Biscoff spread
- 4 oz. {1/2 block} cream cheese, softened
- 1 cup powdered sugar
- 1 tsp. vanilla
- 1 {14 oz.} can sweetened condensed milk
- 1 can Reddi-whip or 1 {8 oz.} tub of whipped topping
- 2-4 Biscoff cookies, finely crumbled
- 1/4 cup Biscoff spread, melted
- Put your cookies in a food processor and pulse until finely crumbled. {Or if you don’t have a food processor, a large ziploc bag and a rolling pin works great!}
- Add the butter and pulse until combined.
- Press mixture into the bottom and sides of a 9-inch pie pan.
- Refrigerate while preparing filling.
- In an electric mixer, beat the cream on medium high until stiff peaks form.
- Transfer whipped cream to a medium sized bowl and store in refrigerator until ready to use.
- In your mixing bowl, combine the cream cheese and Biscoff and beat on medium until light and fluffy.
- Reduce speed to low and slowly add powdered sugar.
- Add vanilla and sweetened condensed milk and beat until smooth.
- Pipe your Reddi-whip onto the pie or spread your whipped topping evenly over the pie.
- Sprinkle with cookie crumbs and drizzle with melted Biscoff spread.

I first found Biscoff when I lived in Belgium and had to bring tons back with me because it wasn’t over here yet. I’m so glad I can find them even at Walmart now. This looks amazing and I think I’m going to have to try this!! Thanks for sharing
