7 Can Chicken Enchilada Soup

If you know me, you know I thrive on easy meals. Seriously. Sometimes I get so bugged that I can't find an easy dinner recipe that I end up just waiting for Zachary to get home to make it because let's be honest - he likes cooking way more than I do {I prefer baking} and he's a lot better at coming up with amazing dinners off the top of his head. It's awesome.

One of our most popular recipes on this blog happens to be one of the easiest dinners in the world - 8 Can Taco Soup. Not only is it easy, but it tastes so good! We have it a little too frequently at our house. ;) In attempts to come up with something equally as easy and delicious, I made up this recipe for 7 Can Chicken Enchilada Soup. You should make this for dinner. Tonight. It's that good.
