I've made this soup a number of time for us, for guests, or to take to people. In fact, I took it to my friend last night that just had a baby. Not only did it serve a purpose in feeding her and her family, but it also gave me a reason to go cuddle their cute, brand new little boy. :) Regardless of what you use it for, I swear to you, it won't last long. Everyone I've ever talked to has loved it! Including yours truly.
Ingredients:
- 5 large russet potatoes, diced
- 1/2 cup (1 stick) butter
- 1/2 cup flour
- 6 cups milk (skim can be used)
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. onion salt
- 1 cup sour cream
Directions:
- Place potatoes in a large pot of water and boil until soft.
- Meanwhile, in another large pot, melt butter on medium-low heat.
- Once melted, add flour to create a roux - stir for 30 seconds.
- Add milk, salt, pepper, and onion salt.
- Stir soup until thick. {It helps to turn up the heat a bit at this point. Be sure to keep stirring it though, so the milk doesn't burn.}
- Drain potatoes and add to soup.
- Add sour cream and mix well.
- Serve while warm.
My favorite way to eat this is in a nice, big bread bowl. Sadly, the grocery store was fresh out this go around. Boo. Maybe next time! Enjoy.
