Ingredients

  • 1 cup butter softened {I use salted}
  • 1 cup white sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1-3/4 cups all purpose flour
  • 1 3.4 oz pkg. vanilla pudding mix dry
  • 2-1/2 cups old fashioned oatmeal
  • 12 oz bag of white chocolate chips
  • 1/3 cup chopped macadamia nuts

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and line a cookie sheet with parchment paper or a Silpat. 

  2. Cream together the butter and sugars on medium speed for about 3 minutes.

  3. Scrape the sides and then add the eggs and vanilla.

  4. In a separate bowl, mix together the salt, baking powder, baking soda, flour, vanilla pudding mix, and oatmeal.

  5. Add the dry ingredients to the wet ingredients and mix until well combined, scraping down the sides occasionally.

  6. Add the white chocolate chips and macadamia nuts and mix until just combined.

  7. Roll the dough into 1-inch balls and place on the prepared cookie sheet.

  8. Bake for 8-10 minutes.
  9. Transfer to a cooling rack and let cool. Serve and enjoy!
