Skinny Alfredo Recipe

This Skinny Alfredo Sauce has all the flavor of regular alfredo, but with a fraction of the calories and fat! A few simple swaps help to keep its rich taste, without overindulging.

Ingredients

  • 1 lb fettuccine pasta
  • 1 Tbsp. extra virgin olive oil
  • 4 cloves garlic minced
  • 2 cups skim milk
  • 1 cup chicken broth
  • 4 Tbsp. all-purpose flour divided
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 cup grated low-fat Parmesan cheese
  • Chopped parsley {optional}

Instructions

  1. Cook the pasta according to the package directions.
  2. Meanwhile, heat olive oil over medium-low heat in a large saucepan. Add garlic and saute until golden brown.
  3. Whisk in the milk, chicken broth, 3 Tbsp. flour, salt, and pepper to the saucepan and cook over medium-high heat, stirring continuously until the sauce thickens.
  4. Add the last Tbsp. of flour, if needed for additional thickness.
  5. Whisk in the Parmesan cheese.
  6. When the sauce is to your desired thickness, pour over and toss with the noodles.
  7. Garnish with parsley.
