Pistachio Pudding Muddy Buddies

Love of pistachios kind of runs in my family. I think it’s a little bit ironic that my mom, my brother, and I all don’t like chocolate, but we could probably eat a whole gallon of pistachio ice cream each. Zachary on the other hand, loves chocolate, so he has more of a thing for regular muddy buddies. But when he suggested that we make pistachio ones, I was sold. These are super easy to make and taste absolutely delish!

Recipe adapted from Caramel Potatoes

Makes about 6 cups

Ingredients:
  • 6 cups rice Chex cereal
  • 1/4 cup butter, melted
  • 1/2 cup sweetened condensed milk
  • 1 cup white chocolate chips
  • 1 {3/4 oz} box pistachio pudding mix
  • 1/2 tsp. vanilla
  • 1 and 3/4 cup powdered sugar
Directions:
  1. Place cereal in a large bowl and set aside.
  2. In a small saucepan, combine butter, sweetened condensed milk and white chocolate chips, just until the chocolate chips have melted.
  3. Add pudding mix and mix just until fully incorporated.
  4. Remove from heat and add vanilla.
  5. Pour over cereal and mix until all the cereal is coated.
  6. Toss with powdered sugar.
  7. Let cool and enjoy.

I suggest storing it in an airtight container to keep it from getting stale. This would be perfect as a roadtrip snack or to take camping this summer!
