Did everyone have a happy holiday season? In case you missed the fan favorite posts for 2012, you can check them all out here. Now it’s time for the first new recipe of 2013!! Huzzah!…Don’t get too excited y’all. It’s really nothing creative or ingenious, BUT it sure is delicious! I proudly present to you, the recipe for the easiest refried bean dip that you will ever make in your life!
We treat this like a dip, but it can easily be used as just a side. It’s delish! {Speaking of delish, this recipe was found at delish.com}
Ingredients:
- 1 (15 oz.} can no-salt added pinto beans, rinsed
- 1 {15 oz.} can refried beans
- 1/2 cup salsa
- 2/3 cup grated cheddar cheese, divided
- 2 green onions, sliced
Directions:
- Preheat broiler on high.
- Combine pinto beans, refried beans, salsa, and 1/3 cup cheese in a medium saucepan.
- Cook over medium heat, stirring constantly, until mixture is heated completely through and cheese is melted. {About 6-8 minutes}
- Pour the mixture into an 8×8 glass baking dish.
- Top with the remaining 1/3 cup cheese and green onions.
- Broil until cheese is completely melted, about 2 minutes.
- Serve with tortilla chips.
