Peaches N' Cream Overnight French Toast

We had a huge breakfast palooza when we were visiting home a couple weeks ago and I'm still fantasizing about it. I think it's safe to say that it was my favorite breakfast ever. As much as I love myself a good bowl of cereal, there's just something about a nice, hot meal with all the fam around. We had a buffet of sorts with a cinnamon souffle, a breakfast quiche, and my personal fav - this peaches n' cream overnight french toast!

I can't even tell you how good this stuff is. I made it again a few days ago and we've loved eating is as leftovers this whole week! The original recipe at Chef In Training calls for canned peaches, which I'm sure are great, but we tried it with fresh peaches and holy toledo. I wouldn't have it any other way. The best part about this {just like any overnight meal} is that you put it all together the night before and all you have to do in the morning is cook it! Umm, yes please!

Ingredients:
  • 1/2 cup salted butter, cubed
  • 2 Tbsp. light corn syrup
  • 1 cup brown sugar
  • 6-7 fresh peaches, diced {or a 29 oz. can, drained}
  • 1 loaf Texas Toast, cut into cubes {I used all but about 5 slices}
  • 8 oz. (1 block) cream cheese, cubed
  • 12 large eggs
  • 1-1/2 cups half and half
  • 1 tsp. vanilla extract

Directions:
  1. Grease a 9x13 baking dish.
  2. In a small saucepan, mix together butter, syrup, and sugar, stirring over medium heat until sugar is dissolved - pour in baking dish.
  3. Place peaches in dish so that they cover the majority of the sugar mixture.
  4. Place half of the bread cubes over the peaches.
  5. Spread the cream cheese cubes evenly throughout the bread and top off with the rest of the bread.
  6. Combine the eggs, half and half, and vanilla in a blender and mix until smooth - pour evenly over the bread mixture.
  7. Cover and refrigerate overnight.
  8. The next morning, remove the french toast from the refrigerator and let rest on the counter for 30 minutes.
  9. Bake, uncovered, at 350 degrees Fahrenheit for 45-55 minutes or until center no longer jiggles.
  10. Serve warm and enjoy!

I hope you love this as much as I do!!

  11. Oh my! I am obsessed with anything peaches and cream and I have got to add this to my repertoire. Unfortunately, I'll probably have to wait until next year when fresh peaches are still being harvested locally. Thanks so much for sharing!
