Pomegranate Energy Bites

Ingredients

  • 6 Tbsp. POM Wonderful 100% Pomegranate Juice
  • 1/2 cup almond butter
  • 1/4 cup ground flax seed
  • 1/2 cup coconut {I use sweetened}
  • 1/8 cup honey
  • 1 1/2 cups old-fashioned oats
  • 1/4 cup mini chocolate chips
  • Fresh pomegranate seeds {Optional}

Instructions

  1. In a medium bowl, combine juice and almond butter until a thick paste is formed.
  2. Add flax seed, coconut, and honey. Stir until well combined. Add oatmeal and mix well.
  3. Add in chocolate chips and pomegranate seeds {if using} and mix carefully, until evenly distributed.
  4. Form into 1 & 1/2 inch balls and place in refrigerator for 20 minutes to let firm up. Enjoy!
