Microwave Peanut Brittle

Microwave Peanut Brittle comes together easily and makes for a sweet snack any time of the year!

Ingredients

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/8 tsp. salt
  • 1 cup roasted, salted peanuts
  • 1 Tbsp. butter I use salted
  • 1 tsp. vanilla
  • 1 tsp. baking soda

Instructions

  1. Grease a 9x13 inch baking dish and set aside

  2. Combine the sugar, corn syrup, and salt in a medium, microwave-safe bowl.

  3. Microwave on high for 4 minutes.
  4. Stir in the peanuts.

  5. Microwave another 3 minutes, stirring every minute, until the syrup is lightly browned.

  6. Add the butter, vanilla, and baking soda to the syrup mixture and stir until light and foamy.

  7. Spread to 1/4" thickness in pan.

  8. Let cool and then break into pieces.
