Breakfast Quesadillas

These Breakfast Quesadillas are a combination of cheese, egg, green pepper, onion, and bacon, slapped between two tortillas. They are easy to throw together and are a delicious tasting breakfast!

Ingredients

  • 8 eggs
  • 1/2 green pepper chopped
  • 1/2 white onion chopped
  • salt and pepper to taste
  • 6 bacon slices
  • 2 cups cheddar cheese
  • 8 small flour tortillas

Instructions

  1. Heat a large skillet over medium-low heat.
  2. Crack the eggs into a medium-size bowl and whisk until smooth.
  3. Add green pepper, onion, salt, and pepper and whisk together. Pour into the heated skillet. Cook until eggs are no longer runny, stirring often. Set aside.
  4. Heat another large skillet over medium-low heat and cook bacon slices in it. Place bacon on a plate covered with paper towels. Pat down to get rid of excess oil.
  5. Chop the bacon into pieces and add to the egg mixture.
  6. In the same skillet that you cooked the bacon in {keeping the excess grease!}, place a tortilla in it, top with 1/2 cup cheese, and then 1/4 of the egg mixture. Top with another tortilla.
  7. Fry until golden brown and then flip. Fry other side until golden brown.
  8. Cut into fourths and serve with salsa or sour cream.
