Candy Corn Chow Mein Cookies

Ingredients

  • 1 & 1/3 cup butter {I use salted}
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 & 1/2 cups all-purpose flour
  • 1 cup chow mein noodles
  • 3/4 cup candy corn

Instructions

  1. Preheat oven to 375ºF and line a baking sheet with parchment paper.
  2. In a large bowl or stand mixer, cream together the butter and sugars until light and fluffy.
  3. Add the vanilla and egg and mix until fully incorporated.
  4. In a medium bowl, stir together the salt, baking soda, and flour until mixed. Add the dry mixture to the wet mixture, 1/2 cup at a time, until fully mixed.
  5. Fold in the chow mein noodles and candy corn, being careful not to crush the noodles too much.
  6. Drop spoonfuls of dough onto the baking sheet and bake for 7-8 minutes.
