Chocolate Caramel Ice Cream Pie

With a buttery, crunchy, sweet corn flake crust, topped with ice cream, and drizzled with chocolate and caramel, you've got everything there is to love in a dessert with this Chocolate Caramel Ice Cream Pie!

Ingredients

  • 2/3 cup light brown sugar packed
  • 1/3 cup butter melted, I use salted
  • 1/2 cup coconut flakes
  • 2 cups cornflakes crushed {measure, then crush}
  • 1 quart vanilla ice cream softened
  • Chocolate ice cream topping
  • Caramel ice cream topping

Instructions

  1. Mix all ingredients, except ice cream, in a medium-sized bowl and combine well.
  2. Press into the bottom and sides of a 9" pie plate and place in the freezer for 30 minutes.

  3. Fill the crust with softened ice cream and place back in the freezer for 1.5 hours.

  4. Drizzle chocolate and caramel over the top and enjoy.
