Spaghetti Pie

This spaghetti pie is a fun twist on your favorite classic spaghetti recipe. The crust is made of spaghetti noodles, butter, egg, and cheese, then it's topped with cottage cheese, a yummy beef mixture and topped with cheese. Even your picky eats will love it!

Ingredients

  • 1 lb. lean ground beef
  • 1/2 cup chopped onion
  • 1 cup canned petite diced tomatoes drained
  • 1 {6 oz.} can tomato paste
  • 1 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/4 tsp. pepper
  • 6 oz. spaghetti cooked and drained
  • 1 Tbsp. butter melted {I use salted}
  • 1 egg whites lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 12 oz. low fat cottage cheese
  • 1 cup mozzarella cheese shredded

Instructions

  1. Preheat oven to 350ºF and grease a 9 inch deep-dish pie pan with cooking spray.
  2. In a large skillet, cook the beef and onions over medium heat, until the meat is no longer pink. Drain fat and add tomatoes, tomato paste, salt, garlic powder, and pepper. Stir until all ingredients and combined and set aside.
  3. In a large bowl, combine the spaghetti, butter, egg whites, and Parmesan cheese. Press into the bottom and up the sides of your prepared pie pan.
  4. Spread the cottage cheese over the spaghetti. Top with the beef mixture, spreading evenly.
  5. Bake, uncovered, for 20 minutes. Spread the mozzarella cheese evenly atop the beef mixture and bake for 5-10 minutes longer, until cheese is fully melted.
  6. Let stand for 5 minutes before serving.
  7. *Optional: Add 1/4 cup diced green peppers when cooking the meat and onions
