Banana Nutella Streusel Muffins

These Banana Nutella Streusel Muffins are a great way to use up leftover bananas and taste amazing! They make for a great dessert or breakfast and the Nutella and streusel add to the perfection.

Ingredients

  • Muffin:
  • 1 & 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 cup light brown sugar
  • 1/2 cup white sugar
  • 3 very ripe bananas mashed
  • 1 large egg lightly beaten
  • 1 tsp. vanilla extract
  • 1/3 cup butter melted {I use salted}
  • 1/2 cup Nutella
  • Streusel:
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1/4 tsp. cinnamon
  • 2 Tbsp. butter {I use salted}

Instructions

  1. Preheat oven to 375ºF. Line muffin tin with muffin cups and set aside.
  2. In a large bowl, mix the flour, baking soda, baking powder, nutmeg, cinnamon, and salt.
  3. In another bowl, mix together the bananas, sugar, egg, vanilla, and butter.
  4. Add the banana mixture to the flour mixture and stir, just until moistened. Spoon the batter into the prepared muffin tins, about 2/3 of the way up.
  5. Heat the nutella in the microwave for about 30 seconds, just to soften it up and make it a little runnier. Spoon about a tsp. of Nutella atop each muffin and swirl it with a toothpick to mix it in.
  6. Bake for 12-13 minutes.
  7. Meanwhile, in a small bowl, mix together the flour, brown sugar, and cinnamon. Cut in the butter with a pastry blender or fork.
  8. After your 12-13 minutes are up, sprinkle the streusel on top of the muffins and continue baking for another 5-7 minutes, or until an inserted toothpick comes out clean.
