“The best way to spread Christmas cheer, is singing loud for all to hear”…and eating all things peppermint. Seriously though. Doesn’t a candy cane or starlight mint taste just like Christmas in your mouth? Well, I’ve got another special treat for you that tastes like all things Christmas, too – Peppermint Meringue Cookies. Yeah. I just went there. My friend made these for us last year and Zachary and I could not stop eating them! The first thing I did this year, was ask her where she got the delightful recipe. And now I’m going to share that recipe with you, my friends. You’re welcome.
This recipe was actually adapted from Martha Stewart. They’re fairly easy to make and are extremely cheap! Not to mention, it makes a ton and tastes delicious.
Ingredients:
- 3/4 cup sugar
- 3 large egg whites
- 1/2 tsp. peppermint extract {Not mint extract. Big difference.}
- Red gel-paste food coloring
Directions:
- Preheat oven to 175°F.
- Line 2 baking sheets with parchment paper. {Either cut to fit or secure corners with masking tape.}
- Fit a pastry bag with a small star tip; Set aside.
- Combine egg white and sugar in a heatproof bowl.
- Set bowl over a pan of simmering water, stirring gently until sugar is dissolve and mixture is warm to the touch. {I put a cookie sheet over a pan and put the bowl on top of it and it worked like a charm.}
- Place egg whites in a larger bowl and mix on medium-high speed with wire whisk until stiff peaks form.
- Mix in peppermint extract.
- Using a small paintbrush {or, if you’re like me – your finger} paint 2-3 red food coloring strips inside the pastry bag.
- Fill bag with meringue.
- Pipe small star-shaped dollops onto prepared baking sheets. {Refill bag as necessary, painting stripes each time.}
- Bake cookies until crisp. {About 1 hour and 40 minutes.}
- Let cool completely on wire racks.
You could totally make these with other flavors and colors for different holidays as well. I’d love to see what you come up with! Enjoy.
